I just received news that my mom's sister, Jackie, is in a hospice program.
The two forms of cancer she's been fighting appear to be winning. Here is
one of her recipes.

Jackie's Jello Salad

Recipe By :Jacquelyn Fast
Serving Size : 1 Preparation Time :0:00
Categories :

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
-----JELLO LAYER-----
2 Black cherry jello
2 c Boiling water
1 cn Wilderness cherry pie filling
-----CHEESE LAYER-----
12 lg Marshmallows
3 oz Cream cheese
1 c Cool Whip

Combine jello and boiling water; add pie filling. Pour into 7x11 or
9-inch
square pan. Chill until firm, making sure cherries are evenly
distributed
as the jello sets.

Melt marshmallows and cream cheese together over low heat. Cool and fold
into Cool Whip.

Frost jello layer.

Thank you, Tara. Jackie's been my surrogate mom for the past 21 years. My
consolation is that she will now be reunited with her husband, my mom and
dad, and her parents. It won't make me miss her any less, but it allows me
to be happy for her. I just hope she passes without too much pain. Her
four children are with her. If they're all there from all over the
country, I suspect that we'll be receiving bad news fairly soon. She's 75.

My heart goes out to you and your aunt. Sounds like she has been a very
special lady. Thanks for sharing her recipe with us. Hopes she leaves her
recipes with you, because whenever you use them she will be right there with

Thank you, Miriam. She's a very strong woman. She's a breast cancer
survivor and has been fighting cancer and leukemia for several years. I
think she'll welcome the next step.

I know I'll think of her every Thanksgiving, because our two families
always got together for that holiday. I think this year I'll make her
Jell-O Salad as one of the side dishes (you always have Jell-O for
Thanksgiving - there's a rule).

That would be a lovely way to remember your aunt. I have two late
aunts who were revered for their biscuits and we remember them every
time the whole family is together eating biscuits. Do you ever read
Ronni Lundy's cookbooks? She mentions remembering our loved ones by
including their special dishes in important meals.

My uncle passed away last week. His funeral was last Friday.
Afterward, the family ate:

cold cut tray
chicken fingers
rolls
potato salad
cole slaw
macaroni and cheese
baked beans
green beans
pineapple and cheese casserole (I hate this!)
peach cobbler
apple pie
coconut cake (My aunt made this the night of my uncle's passing. She
knew she would want to have something to feed the mourners.)
tea
Cokes
bourbon snuck into the Cokes -- it's snuck in in deference to my late
grandmother who disapproved of such things. She was never fooled and
neither is anyone else, but we must adhere to protocol.

No, I have a tendency to buy cookbooks and never open them. That's why it
was easy to choose books to sell on eBay recently. But I've actually never
heard of Ronni Lundy.

We do try to make special things on the birthdays of family members who
have passed. Like the spice cake with penuche frosting that my grandmother
made for my dad every year. I don't associate it with Gramma, but I do
associate it with Dad.

I don't think Ronni Lundy is too well known, but I enjoy her cookbooks
immensely. She has written mostly Southern cookbooks. Her recipes
and stories just remind me so much of home. She has one non-Southern
cookbook -- The Festive Table. It's about holiday food and rituals,
both traditional and newly created. It's very cheerful and
comforting. Maybe your library has her books available.
