Default yorkshire puddings

I have just got a new oven and my yorkshire puddings will not rise,
dont know why anybody got any idea why a new oven should make a
difference.

Only that it is not hot enough to start with. Are you putting the
batter into a very hot tin? You can do that on your hob to start it
off.

I went from gas to electric convection, and my puddings were attrocious to
begin with. I just kept on trying, and found I needed the oven on full
blast, and slightly more egg, or less flour and milk if you prefer!
The good thing was I didn't need to move them about the shelves, as the oven
seems to have a lot more even temperature. (as it should being a convection
oven).

oooh, yep that'll do it!
My Mum once had relatives over for Sunday lunch and made them that way! They
were well flat! (My Mum usually makes the best Yorkshires ever!)
She's never gotten over it!

The last time I made Yorkies was almost a year ago and they were magnificent.
They rose in a way that I had never seen before and had a wonderful texture.
Yorkies have always been more or less and hit and miss thing with me, sometimes
rising nicely and other times not so much. I don't think that I can count on
replicating that last batch. I may never be able to do them again :-(

The best pudding's I ever made were made with fresh free range eggs. They
were a little bit bright (the yolks were really yellow) but their size was
fantastic, and more importantly they tasted great! It was the first time I
had ever cooked for my future husband, and he'd never had puddings like them
before and never has had since!
