An Egg Query
 
I'm a "must have eggs" for breakfast kinda guy. Thursday I had a tooth
extracted. So Friday and Saturday I experimented with scrambled eggs rolled
up in soft flour tortillas.

3 eggs, a little water, salt, pepper, frank's hot sauce, garlic powder,
onion powder. Beat eggs well with water and frank's hot sauce in a bowl.
Pour into a greased non-stick fry pan on medium low heat. Season the eggs
with everything else and add a little shredded cheese. Keep the eggs moving
in the pan. Warm 2 tortillas in a microwave covered with a damp paper
towel. Roll the cooked scrambled eggs up burito style in the 2 tortillas

I might not go back to fried.

Are there any other egg dishes I should try while my mouth is sore?

You might try mincing a little garlic and onion anmd put them in the pan
for a minute or two and then add the eggs, rather than use powdered garalic
and onions.

Soft boiled eggs are good also. Very easy to make, make them exactly like hard
boiled eggs except you just boil them for three minutes instead of fifteen.

Take into account any altitude factor. Here, in subsurban Denver at
5800 feet, 3 minute eggs are still pretty raw. SIx minutes more or
less gives you a solid white and soft-to-runny yolk.

I like baked eggs -- scramble a couple of eggs with Worchestershire,
salt, pepper, garlic, minced onion, peppers, ham; whatever you think
you can tolerate chewing. Pour into a glass baking cup, greased with
margarine and lined with thin slices of cheddar cheese to form a
"crust". Bake for 20 minutes or so at 350 degrees F., until set...

my usual eggs are scrambled, topped with Tapatio hot sauce, in a flour
tortilla. i flip my tortilla on a gas-stove burner though, to give it a
little flavor and texture.

variations are endless. one of the best things is to add left-over
roasted red potatoes. refried beans seem to work with fried eggs. smoked
pork can add something to the eggs ... and all sorts of cheeses work well,
even bleu.

Oh boy, here we go... Another hard boiled egg thread. <lol>

I only hard boil for 5 minutes, then cool them with cold running water
right away. I just hate gray yolks!

Do your scrambled eggs like this:

3 free range eggs in a glass bowl with half tsp salt and freshly
ground black pepper. Whisk with 1 tsp cold water. Add 1 tsp finely
chopped parsley (or cilentro, or basil ,or a combination).

In a shallow non-stick pan melt 1 tbsp butter and keeping the element
on low add the egg mixture. Wait until the curds begin to form and
then ever so slowly turn them until there is only a film of uncooked
egg on top. Turn the element off. Cook your toast, butter it, and
then cut into 1 inch slices.

Pile the egg mixture on top. Sprinkle with more herbs (fresh or
dried) if you wish.

This is really the very best way to cook scrambled eggs. Believe me.

i like fish tacos (fish cooked over wood at a beach restaurant in mazatlan
and served with corn tortillas are best, wahoo's is second (and more
convenient), and rubio's is a distant third) but ...

even if you didn't like those styles i'd think anyone who liked fish could
put the fish they like in a flour or corn tortilla and still like it.

actually i should try grilling some tillapia for tacos ... supposed to be
a good low-toxin fish these days.

I ate tilapia once and have never had the urge to repeat it.
