Does anyone have a good recipe for a lemon filling for a jelly roll cake?
I'd like to be able to make it a day ahead and for it to be easy. Cindy |

Of course, you really don't need the cake part for it - just a spoon. Lemon Curd, Nutella, and Bearnaise Sauce each require nothing but a finger or a spoon... but if you insist... LOL Cyndi <Remove a "b" to reply> Lemon Curd 5 Eggs 5 oz butter 3 lemons (rind and juice) 2 cups sugar Thoroughly mix together and cook for 10-15 minutes... then jar and refrigerate. |

Sounds good. If you need something not as stiff and easier to make than genuine curd, check out my post for lemon curd pie, on google. Regards, NT |
