Default Lemon filling for jelly roll needed

Does anyone have a good recipe for a lemon filling for a jelly roll cake?
I'd like to be able to make it a day ahead and for it to be easy.

Lemon Curd? Of course, you really don't need the cake part for
it - just a spoon. Lemon Curd, Nutella, and Bearnaise Sauce each
require nothing but a finger or a spoon... but if you insist...

Lemon Curd

5 Eggs
5 oz butter
3 lemons (rind and juice)
2 cups sugar

Thoroughly mix together and cook for 10-15 minutes... then jar
and refrigerate.

Sounds good. If you need something not as stiff and easier to make
than genuine curd, check out my post for lemon curd pie, on google.

....if you would like something a little lighter, just add fresh
whipped cream to the curd.

....also make up a little simple syrup (1/2 sugar - 1/2 water bring to
a boil and make sure the sugar gets disolved), add a lemon juice to
taste, and brush on the flat sponge cake before spreading the
filling...
