Need suggestion for salmon
Am planning an important supper.
1. Goat cheese rondelle with oven roasted onions ina balsamic glaze 2. Pear sorbet 3. Salmon steak with a sesame crust with leek and lemon cream I plan to sear the steak in a frying pan then finish it in the oven. What I would like to know is that I'd like to offer some veggies, even some rice or orzo, I don't know something. The steak would be on top of the veggies. Any suggestions? Thanks |

Split Pea and Potato Purée? 1 cup split peas 3 potatoes, peeled and chopped 1 onion, chopped 2 cloves garlic, crushed 3 tbsp. olive oil or butter 1/4 cup half-and-half or light cream Soak peas for a few hours. Drain and combine peas with potatoes, onion, and garlic in 2-1/2 cups salted water. Bring to a boil, reduce heat, and simmer for 1-1/2 hours. Drain, reserving cooking liquid. Mash vegetables into a near paste with a ricer, sieve, food processor, whatever you've got. Beat in olive oil or butter and half-and-half. The tastes will certainly go with the salmon and sauce and the rice with green flecks would look nice as a "bed" -- Peter Aitken Remove the crap from my email address before using. |

The steak would be on top of the veggies. Interested in something that looks Japanese at a glance? Shred diakon or raw turnip into clear/white threads. Put a mound of them on the plate and set the salmon on top. Visually like sashimi or teriyaki. And put some sort of leaves around it. Stem down leaf up. Make a ring of them. Maybe belgian endive leaves. Those taste good and look really cool. |

The steak would be on top of the veggies. Well-seasoned Salmon is great with plain white rice. Sesame, leek, and lemon cream seems a bit light, though, so you might want to make a saffron rice. Just add a pat of butter, a few tbs of chopped onion, and 10 strands of saffron per cup of dry rice to the boiling water before adding the rice. --Blair "Granula rasa." |

Or would it look better on a bed of baby spinach that has BEEN LIGHtly wilted by the heat of the fish? You could serve some rice on the side, in that case (mold it in a little custard cup and invert onto the plate, to the side odf the fish. Sprinkle w/ a few black sesame seeds and arrange a few long shoots of chive sticking up from one edge. |

When they're just about done, toss in some minced garlic and saute for another minute. Splash in a quarter cup or so of chicken broth (or water) and add a bunch of cleaned and coarsely chopped swiss chard. Cover and cook until chard is wilted and done to taste. Salt to taste, if needed. You can either serve this in wide, shallow soup plates with the salmon & sauce on top, or spoon the chard and mushrooms out of the broth and serve on a flat plate. The chard should go well with the leek and lemon cream. I generally don't like mushrooms with fish (I don't think the flavors complement each other well), but one of the nicest meals I ever had (at a brewpub called Dempsey's, in Petaluma, CA) was swiss chard cooked this way with a slab of roasted halibut on top, and some gingery beet relish on top of the fish. For salmon, though, I might leave out the mushrooms, come to think of it. Jen San Francisco |

I thought of doing a rice/mushroom bed. I don't know. I really want to impress these

The steak would be on top of the veggies. RD, I am going to address your question even though that's not how I would serve the salmon. If I served salmon, it may be on a bed of rice, or even vegies, but I'd also have side dishes of vegies, such as asparagus. For a bed of vegies, I'd just quickly cook a mixture of vegies, such as carrots, broccoli, onions, garlic, cauliflower, eggplant, sweet potatoes, colored bell peppers, whatever you like and whatever is fresh, and then very coarsely chop in a blender or food processor. If you wanted to tone down the flavor a bit and make it a bit heavier in consistency, you could add in whatever type of rice you like. I'd leave it coarse and not a puree. Season however you like, and you could add a bit of sesame oil for flavor to bring out the sesame on the salmon. As somebody mentioned, the whites, greens, reds, and oranges would be a good presentation with the dark orange salmon meat. Ken |
