REC: German Red Cabbage and Apple Slaw
I just posted this on alt.food.recipes in answer to a request. This recipe
came from a friend's mother who was born and raised in Germany. I thought someone here might enjoy it. German Red Cabbage and Apple Slaw 1 small head of red cabbage, shredded 2 small crisp apples, cored and cut in julienne 2-3 strips of bacon 3/4 cup mayonnaise 1/4 cup cider vinegar 3 tablespoons granulated sugar 1/2 teaspoon salt 1/2 teaspoon dry mustard, or crushed mustard seed 1/2 teaspoon celery seed 1/4 teaspoon freshly ground black pepper Fry bacon until crisp and drain, reserving fat. Set aside until last. Prepare cabbage and apples. Toss apples with vinegar, then drain, reserving all liquid. Combine cabbage and apples in large mixing bowl. Prepare dressing by combining all remaining ingredients in a medium mixing bowl. Add reserved liquid from apples and 3 tablespoons bacon fat. Whisk together until well-combined. Pour dressing over cabbage and apples, tossing to coat well. Cover and refrigerate 2-3 hours, tossing again at half hour intervals. Just before serving, crumble reserved bacon over slaw and toss to mix.
