Tunnel Of Fudge Cake with Raspberry Sauce
Creamy Raspberry Fondue*
Raspberry-Pretzel Dessert*

*Calls for frozen raspberries. A person could substitute fresh
raspberries. ;)

Tunnel Of Fudge Cake with Raspberry Sauce

Amount Measure Ingredient -- Preparation Method

---Cake---
1 3/4 cups sugar
1 3/4 cups soft butter
6 eggs
2 cups powdered sugar
2 1/4 cups flour
2 cups chopped nuts
3/4 cup cocoa
---Glaze---
3/4 cup powdered sugar
1/4 cup cocoa
2 tablespoons milk
---Raspberry Sauce---
1 pint raspberries
2 tablespoons sugar
1 teaspoon lemon juice

Directions: Cake - Preheat oven to 350 degrees. Butter and flour a tube
pan. In a large bowl, beat together sugar and butter with a hand mixer
until light and fluffy. Add eggs one at a time, beating well after each
addition. Gradually add powdered sugar. By hand, stir in flour,
walnuts and cocoa. Pour into prepared pan and bake for 1 hour. Remove
from oven and cool in pan for 1 hour. Invert onto serving plate.

Glaze - Whisk together all ingredients and drizzle over the cake.

Raspberry sauce - Place ingredients in blender and puree until smooth.
Strain to remove seeds. Serve with cake.

Creamy Raspberry Fondue

Amount Measure Ingredient -- Preparation Method

4 ounces whipped cream cheese
20 ounces raspberries, frozen -- thawed
1/4 cup cornstarch
2 tablespoons sugar
1/4 cup brandy

Let cream cheese come to room temperature. In saucepan crush raspberries
slightly. Blend together cornstarch and 1/2 cup cold water; add to
berries. Cook and stir till thickened and bubbly. Sieve; discard seeds.
Pour into fondue pot; place over fondue burner. Add cream cheese, stirring
until melted. Stir in sugar; gradually add
brandy. Spear fruit or cake cube with fondue fork; dip in fondue.

Suggested dippers: Brownies, pound cake, pears, peaches.

Raspberry-Pretzel Dessert

----CRUST----
2 cup pretzels -- crushed
3/4 cup melted butter
3 tablespoon sugar
----CREAM CHEESE LAYER----
3/4 cup sugar
8 ounces cream cheese -- softened
1 small tub cool whip
----FRUIT LAYER----
2 small boxes raspberry jello
2 cup boiling water
2 packages raspberries -- partially thawed

1. Mix together pretzels, butter, and 3 tablespoons sugar, and press
in bottom of 9 x 13-inch pan. Bake for 10 minutes at 400F. Cool.
2. Cream the 3/4 cup sugar and cream cheese, fold in cool whip, pour over
pretzel layer.
3. Dissolve jello in water, add berries, pour over cream cheese, chill 5-6
hours.

Thanks! I have never had that pretzel thing with raspberries (just
strawberries), and I've never made it myself. Will make it sometime

You're very welcome. :) I haven't had that dessert in many, many years.
We haven't planted raspberries yet. ::sigh::
