Pasta A la Jude

1/2 box Barilla Pasta - I used campanelle - cooked al dente

toss through with a mixture of: 1 large leek, 1/2 lb mushrooms, 1/2 lb
grape tomatoes, 1 can artichoke hearts, snipped fresh rosemary,
flat-leaf parsley, and thyme from the herb garden, sauteed in olive
oil. At the end of cooking time I stirred in a handful of kalamata
olives and oil-marinated sundried tomatoes. Then I chopped up about 1/4
lb of fresh boccocini (tiny fresh mozzarella balls) and let them melt
from the heat of the pasta and veggies. Topped it with a little
shredded asiago cheese.

served it with a salad made of fresh baby mized greens, blackberries,
toasted chopped hazelnuts, waterchestnuts, and crumbled bleu cheese.
Tossed that wiuth a citrus vinaigrette made with olive oil, key lime
juice, orange juice, a dash of apple cider vinegar, 1 t sugar, and
fresh lemon thyme.

what a delicious meal i had!!

Sounds wonderful, would you cook it again tomorrow night? I'll get in
my space transporter and arrive from Oz just before dinner. I need the
address though!! <g>

p..s I'll bring the wine.

Sounds good. However, around here, fresh moz gets squashed between
tomato slices before I can use it for anything else.
