Would the Italian flatbreads go OK with hummus or falafel, or would
their the Italian and Middle Eastern heritages clash too much? I won't
be serving it to any Jews or Muslims or Hindus, so the lard should not
be a problem.

Seriously (well, almost),

Well, why not? Piadine are very versatile.
In theyr original area, Riviera Romagnola, they are served in
mant ways, ranging from coldcuts + cheese to nutella, the only
limit being the fantasy of the people.
Getting back to falafel, and also kebab: a moroccan kebab shop
owner here in Reggio, Jamal, offers three options as the bread
for his kebabs and falafels: arabian bread, standard italian
sandwich bread and... little pizza :)
He bakes both normal sized (15" diameter) and small sized (8"
diameter) pizzas, margherita style with just tomato and
mozzarella, and the small ones are perfect for Kebab and falafel,
expecially if the filling is abundant.
