Catfish thread?
 
I had small computer crash. I think Kili and I had permutated this into a
regional rural restaurant experience/discussion. I am not fond of McFood
places. The 'ethnos' of regional cuisine is fast becoming a lost art. The
economics of restaurant trade forbid it except in a few areas. The best
places left are the few small towns,where the 'old line cooks' are still
active. They are a treasure! Let's learn from that dwindling crowd of yeoman
cooks,professional and/or family. By the way, keep your mouth shut and don't
lettum even think that you know what you are up to!
Only by trial and error will you get even near to them and their love of
food. Recepies amounts vary, and there is no one size fits all. Get as close
as you can, adjust and then do it your way.
