Default Last Night's Dinner (REC)


This was easy and Yum. Serves 4-6.
Measurements are approximate.

1/4 c. finely crushed cracker crumbs (Ritz are fine)
1/2 c. melted butter (1/4 lb.)
1/2 c. finely chopped celery
1/4 - 1/2 c. finely chopped bell pepper
1/4 c. chopped green (or mild sweet) onion
1/4 c. chopped parsley
1 tsp. dry mustard
1/2 tsp. salt
fresh ground black pepper
3 Tbsp. sliced black olives (optional)
3 drops hot pepper sauce
1/4 c. milk
1 1/2 to 2 lb. fresh or frozen cod, or other mild white fish, cut into 1
inch cubes.

Preheat oven to 350 deg. F.
In a large bowl, combine all ingredients, adding fish last. Mix well,
turn into 1 1/2 quart baking dish. Bake 30-40 minutes or until fish
flakes easily and crumbs are golden brown.

Served with oven-baked onion and potato wedges, steamed broccoli,
and a salad.
