Salmon Emergency!
 
I've got a lovely tender bit of salmon tail fillet, but very few other
ingredients,only salt, pepper, lemon, mixed vegetables (carrot,
cabbage, green beans) and mashed potato.
I'm starving hungry so I'm going to cook thm soon, but I'm looking for
inspiration. Best recipe in the next half hour gets cooked!

Season the filet with S&P and broil (or grill) it.
Heat the mixed veggies but don't over cook them.
Warm up the mashed potatoes a bit and put them in a small cup. Turn the cup
over on a plate to make a formed "stack" of potatoes.
Pop the plate under the broiler as the salmon is finishing to warm the plate
and brown a crust on the potatoes.

Put the salmon on the warmed plate, add veggies and squeeze lemon over the
fish and veggies.
Perhaps a thing slice of lemon twisted on top the fish as a garnish. Perhaps
a small bit of butter melting atop the potatoes.

BAM! You're done!
Enjoy.

Thnks Pete- I'm just off to try you're recipe now, it sounds like it's
going to be quick, simple, and best of all, very very tasty!

I'll let you know how I get on.
