Default Big can of roasted red peppers - use for?

I buy the huge cans of roasted red peppers and love them (no vinegar). I
have only one recipe that I can use them for (using about 3 cups) and it
leaves me the rest of the can. I like these peppers so much, but don't want
to try to freeze them, nor do I want to make double of the recipe I do use
them in.

Does anyone have a recipe for canned roasted red peppers that would use up
at least 3 cups?

I've never tried this myself since I prefer fresh vegetables and live in
an area where I can buy fresh year round, but almost anything that's
canned makes a reasonable cream soup.


Saute a chopped onion in butter. Add another chopped vegetable such as
carrot if you like.

Rinse the peppers and puree them in a blender.

Add to the onion along with chicken or vegetable stock.

Bring to a boil. Then add and heat thoroughly cream or half and half.

Season with salt, white pepper, dried dill and tarragon.

You could also finish it off with a splash of champagne.

You could dice them up and use them in spaghetti sauce, or grill some onions
and italian sausage and put it in the crockpot with a can of tomatoes and
tomato sauce and let it cook all day and make hot sausage subs.

This is a quickie dish I came up with a few years ago. Since my
instructions are for roasting 3 fresh peppers I'm guessing you'll
substitute about 1 1/2 cups of your already roasted peppers.
Hope this helps with giving you more ideas as to what to do with
your cache of peppers.

Fajita Casserole

2 lg. (10") or 3 med. (8") Flour Tortillas cut into 1" pieces
2 cup Tyson (brand name) Fajita Chicken strips
3 Bell Peppers, Roasted and peeled & sliced *
1 large Onion, sliced or chopped
2-3 TBSP Olive Oil to saute onions
1/2 - 3/4 cup Diced Tomatoes
3/4 cup Sour Cream
1 1/2 tsp Chopped Garlic, dried (sprinkle over sour cream)
1 1/2 cup Shredded Cheese(I used Marble Cheddar)
Tony Chachere's Original Seasoning - to sprinkle over the top
Konriko Greek Season - to sprinkle over the top
Black Pepper - to sprinkle over the top


Grease casserole dish. Toss in 1/2 of the tortilla pieces.
Place chicken strips atop tortilla pieces. Now toss in pepper
strips and onions. Sprinkle in diced tomatoes. Top tomatoes
with sour cream and garlic. Top dish with shredded cheese and
then lightly sprinkle with both seasoning mixes and the black
pepper. Bake until heated throughout and the cheese is bubbly.

* Bell Peppers - to roast them - place pepper halves on a greased
broiler pan (line with aluminum!) and place a few inches below
the broiler element. Broil until the outside of the peppers have
been charred black. Remove and place them into paper bags. Let
"steam" inside for a few minutes and then take them out and peel
off the blackened layer. Do NOT rinse - you have to do it "the
hard way". :P

This won't use three cups of roasted peppers, but we often get a small
jar and julienne the pepper and put the strips on a pizza. They are
also good in salads and in anything that could use a nice accent
flavor.

As with most things from Costco that come in large size, when they are
unattainable in a smaller size either in quality or size and cost, you can
almost throw away half of it and not come out the worse in the pocketbook.
However, since I do use half of the can in a pasta sauce, substituting a
half can of peppers for tomatoes, I am left with the other half, which I
would like to use up in a different way. I also use lots in a lasagne,
substituting lots of them for a large portion of a tomato sauce.

As I was wanting ways of using a large amount, I want to thank you all for
the suggestions that I feel will use a lot of the peppers before they go
bad.

Pureed soup, I had not thought of that. Excellent!

idea, even tho I'm not a big meat eater, my spouse will LOVE this.

I do eat a lots of fresh red peppers, but I really bulk at roasting them
myself. When I am in CT at Costco, they have Italian items that they do not
have in Virginia. How can one resist a large can of roasted peppers,
kalamata olives, etc.

Throw in the food processor with some garlic, spices, and olive oil. Puree
nice and concentrated, then mix into ricotta cheese. Use as a spread on
some nice bread that's been toasted.

When I get red peppers at a bargain price, I buy quite a few, roast, puree
and freeze the extras. The puree keeps very well for several months in the
freezer; when needed, just thaw, stir and use. Freezing doesn't work well
if you need the peppers in chunks or slices.

Not one that would use at least 3 cups. They do go good on pizza.
Here's a recipe I intend to try next week:

7 oz roasted red peppers, drained
1 ts dried basil leaves
1 ts hot pepper sauce
1 large garlic clove, crushed
1 c cottage cheese

In a food procesor, blend red peppers, dried basil, hot pepper sauce, and
garlic until chopped. Add cottage cheese; process. Chill at least 1 hour.
Serve as a dip with fresh vegetables.

Diced and added to rice or orzo or couscous .
Diced and mixed with Olive Oil as a topping for crusty Bread.
Strips in an omelet or a frittata.
Put them on Pizza
Placed into a Submarine sandwich.
Strips mixed with sautéed onions and drizzled with olive oil.
Put into a home made tapanade.
Drain and add to a salad as a garnish.

peppers, but never thought they'd be in cans.

Not sure what portions of ingredients to use, but I made this amazing
pasta sauce once which was a take on puttanesca. Saute garlic and capers,
add sundried tomatoes(oil-packed!) and tomato sauce and let it thicken
to desired consistency. Throw in the roasted peppers, freshly chopped
parsely and some pre-cooked cubed tuna or swordfish. Heat for five
minutes and mix it with penne. AMAZING!

Hi Dee,

This is my first time posting (been lurking for quite a while) but
seeing a topic about about roasted red peppers i just had to delurk. I
miss them so much - I'm from Bulgaria, where roasted red peppers are
pretty much a staple. I'm now living in Florida, pepperless (only
vinegared kind available).

My favorite thing to do with roasted red peppers is to roll them in
flour, dip them into a beaten egg, then flour again, then egg again,
and fry on both sides until golden (I'm sure this process has a name
:-)). The result is delicious, especially if served with crumbled feta
cheese on top. It's essential that the red peppers have no vinegar,
otherwise one ends up with a very very nasty thing.

I hope you try it - it's sooooo tasty :-)

This was delcious.

Robbing ideas from several books, I made a good foccac last night.
Roasted red pepper, leek and myzithra foccacia:
I made the dough from 3 cups water, 1 1/2 T salt, 1 1/2 packets yeast, 3
T olive oil, and about 8 cups of 50/50 all purp/bread flour. (This made
two breads)
The topping was
3 red peppers roasted and peeled, whirred in a blender with a tablespoon
of balsamic vinegar and 2 oz of cream cheese, painted on the thinly
rolled dough on a very well greased cookie sheet (half this recipe per
bread). Next, sprinkle on four leeks, cut into strips and sauteed on med
low with a bit of olive oil and garlic until very soft (half of these
per bread). I also popped just a few chopped greek olives on it. Into a
400 degree oven, and in about 5 minutes. Pull out and spread about 3/4 C
of grated Myzithra cheese (per bread) and bake until the crust is done.

this is good room temp the next morning as well (burp).

Keep looking. You might find the un-vinegared ones in Italian markets and you can also always make them
yourself easily. Your recipe sounds interesting. Does that have a name?

It's "battered peppers" (although without translating it sounds much
more exotic - "panirani chushki")

Unfortunately we don't have many specialized markets around here,
except for far-eastern ones. I'm always checking the "ethnic" sections
of supermarkets but all the roasted peppers they have are made with
some kind of (strong) acidifier.

As for making them myself, all I can find in the way of sweet peppers
are bell peppers, which don't work too well. I would like to try
asking the store if they could get some for me, but I don't know the
name of the kind I'm looking for. They are triangular-shaped,
flattish, about 8 inches long, 2 inches wide, and sweet - any ideas?
