Default Best Birthday Cake Ever

This chocolate cake has a layer of cream cheese in the center.

Best Birthday Cake Ever

2 cups flour
2 cups sugar
1 teaspoon salt
1/2 teaspoon baking soda
1 teaspoon baking powder
1 1/3 cups milk, divided
1/2 cup butter, softened
2 eggs
1 teaspoon vanilla
4 ounces unsweetened baking chocolate, melted
16 ounces cream cheese, softened
1/2 cup sugar
4 tablespoons butter
2 tablespoons cornstarch
2 eggs
4 tablespoons milk
1 teaspoon vanilla

In a large bowl, mix flour, 2 cups sugar, salt, baking soda and baking
powder. Add 1 cup of milk and 1/2 cup butter; mix well. Add 2 eggs, 1/3
cup of milk, 1 teaspoon vanilla and chocolate and mix for 1 1/2 minutes
at low speed. Set aside.

In a large bowl, mix cream cheese, 1/2 cup sugar, 4 tablespoons butter
and cornstarch until blended. Add 2 eggs, 4 tablespoons milk and 1
teaspoon vanilla. Blend well. Set aside.

Preheat oven to 350 degrees.

Grease a 13-by-9-inch pan. Spread half of the cake batter in the pan.
Carefully spoon the cream cheese batter on top. Spoon and spread the
remaining cake batter on top of the cream cheese layer, covering all of
the cream cheese layer with cake batter. Bake 50-60 minutes. Cool before
icing (recipe follows).


Fudge Icing

1/2 cup butter or margarine
1/2 cup milk
4 ounces unsweetened baking chocolate
2 teaspoons vanilla
4 cups powdered sugar

In a medium saucepan, bring butter and milk to a boil, then immediately
remove from heat. Add chocolate and vanilla, stirring until the
chocolate is melted. Blend in the sugar, beating until all of the sugar
is mixed and the icing is creamy. Pour the warm icing over the top of
completely cooled cake.
