REC: Grandma V's Red Cabbage
This is a traditional german dish, served warm, that I grew up with. Both
grandma's on my dad's and on my mom's made this and they made it the exact same way. Had it many times in restaurants, Germanfests, whatever, but it's never the same as this recipe. I lost all my recipes when I moved from Maui to Florida, so at least if I post this, I can always google it. ================================================== =================== GERMAN STYLE RED CABBAGE 1 cabbage, 2-3 pounds, shredded & cored 1/2 cup water 3 Tbs. butter 1/2 cup cider vinegar 1/4 cup brown sugar, packed salt & pepper to taste Toss the shredded cabbage into a stock pot (with a lid!) with butter, water, cider and brown sugar and cover. Cook down on medium heat until cabbage is tender, approx. 1 1/2 hours to 2 hours, stirring occasionally. Cabbage should have a little juice in it, but if it's swimming in juice add a bit of flour to thicken it. |
