Snow Pie
 

This was my Dad's favorite

SNOW PIE
Printed from COOKS.COMhttps://cooks.com/rz0g13mg
3/4 c. sugar
1 c. boiling water
1 tsp. vanilla
3 egg whites
2 tbsp. cornstarch
Mix sugar and cornstarch. Add boiling water and cook until thick and
clear. When cool add to egg whites that have been beaten and add
vanilla. Put in pastry crust. Set in refrigerator to cool. When ready
to serve cover with whipped cream sweetened and flavored with vanilla.

That seems like a "no-bake" version of the water pie I posted above,
plus eggs. Perhaps this would be more rich than my recipe.

the filling is white and it is topped with white whipped cream.
Probably another Depression Era dessert. There are variations on the
'Net.

Reading about your water pie made me think of the snow pie. I hadn't
thought of it in years. I would think it would be more flavorful than
the Water Pie.

I'm trying to wrap my head around uncooked eggwhites added to cooled
other things. Maybe they mean 'just a little cooled?

For an example, think of Angel Food Cake preparation. Nothig is hot
or warm there. Cooked egg whites aren't going to be able to be beaten
to peaks. Nor is the beaten mixture supposed to be cooked by the
batter.

I don't rule them out. One of my favourite Magaurita recipes called for
lime juice, sugar, teguila, Triple Sec, ice and an egg white. Whiz it
up in a blender. The egg whites make it nice and foamy.

no, they are folded into the rest of the ingredients that have let
come to room temperature. They fluff the rest of the ingredients.
Then the mixture is put in the pie shell. Then all is refrigerated.
Then all is topped with whipped cream.
