It was still completely green but had a nice feel. I slice two sides off, cut a criss cross patter almost to the skin, flipped it inside out and scrapped off the fruit. Then I peeled the skin from the part that was left and slice off the rest of it. I think it was the best mango I have ever had. I used it to make a Thai style mango chicken salad. I minced a chicken breast and sauteed it with about 1/2 cup of finely chopped red onion and a mince clove of garlic. The chopped mango went into a bowl with a diced red pepper and some chopped fresh mint and basil and dressed it with a couple tablesppons of lime juice and a couple teaspoons of reduced sodium soy sauce. When the chicken was cooled it was added to the mango and red pepper and then served on a bed of leaf lettuce. |

THey call them 'chimi' there. |
