My current favorite salad
 
Just made a new batch this morning. Good with any meal but
especially good with lasagna or spaghetti for me.
- one large cucumber peeled and chopped
- equal amount of fresh tomatoes chopped
- one large onion peeled and chopped

Mix all in a large bowl with a small amount of kosher salt. Cover
and refrigerate for a few hours. Drain liquid off the bottom then
add your favorite salad dressing. I prefer the mix of mayo and
ketchup for this. Pink dressing. Not much...just a good taste.

OR... just add dressing to a bit each time you have some.

Today's batch appears to be almost 2 pints. Good addition for
several meals. :)

Lemon juice and extra-virgin olive oil.

Although I'm as likely to make it up every time I want some.

I take that mix of veggies, add cottage cheese and sour cream and make
it a hot weather main dish. Even better then next day.

What does "chopped" mean... sounds messy... for salads I prefer
sliced/diced, and neatly, all equally sized pieces.

I use fresh squeezed lemon juice and EVOO, s n'p, and maybe a smidgen
of fresh herbs, typically fresh picked curly leaf parsley. It would
never occur to me to make salad dressing with ketchup. I wouldn't
salt a salad in advance to remove the water... end up with limp wussy
ingrediants and tossing that liquid is like tossing the baby out with
the bath water,,, that's a great way of getting rid of the Vitamins
and Minerals.

Sometimes I'll put mustard in a vinegarette. I will never be able to spell that. I could look it up, but that would take too much time.

Spell-checker is quite useful for words you're not quite sure of the spelling.
It will underline the word in question and give you possible correct spellings.

Popeye, I just had a vision of yoose whacking off over a salad bowl
to put yoose special headboard salad dressing on it. Mexican gals
will eat *anything*

Don't forget the salt and pepper admiral.

And the Crystal Palace aperitif.

It is 93F in my kitchen.

Quite comfy in the rooms with AC, though.

I'm waiting for my basil to grow more. Will eat with tomatoes, fresh
mozzarella, balsamic glaze and olive oil.

that temp is tough with high humidity. We'll see how we do in coming
days with temps in middle 90s, probably no problem. 100s day after
day do make us wish for A/C. We've already skipped that part of the
year.
