Sweet Macaroni Salad
 

Y'all remember a couple of years ago Gary, I think it was him, said his sister
made a macaroni salad and used sweetened condensed milk? Well, here's a recipe
featured today on MSN from the Taste of Home website. (Gary, if it wasn't
you that said your sister makes this salad, I apologize.) I kinda thought he
was mistaken with that addition but it seems there really is such a recipe.



1 package (16 ounces) elbow macaroni
4 medium carrots, shredded
1 large green pepper, chopped
1 medium red onion, chopped
2 cups mayonnaise
1 can (14 ounces) sweetened condensed milk
1 cup cider vinegar
1/2 cup sugar
1 teaspoon salt
1/2 teaspoon pepper


Directions:

1. Cook macaroni according to package directions. Drain and rinse in cold water; drain well.
2. In a large bowl, combine macaroni and vegetables. Whisk together remaining ingredients until smooth and sugar is dissolved; stir into macaroni mixture. Refrigerate, covered, overnight.

That actually doesn't look so bad, except for the metric buttload
of mayo in it. However, I'm familiar with Korean potato salad;
in moderation I don't see why Hawaiian macaroni salad would
be harmful. At least it has a decent balance of sweet and
sour, and not a ton of either.

A person could go hog wild and put some defrosted frozen peas
in it. But then it wouldn't be Hawaiian Macaroni Salad, would
it?

I do like mayonnaise a LOT, but that is quite a bit in the 'authentic-Hawaiian-
macaroni-salad' recipe he posted. The one I posted had 4½ stars out of a
possible 5 from the readers.

Like a lot of Hawaiian dishes, extreme simplicity is a hallmark. I like potato mac salad more than mac salad. You can put some peas in Hawaiian potato-mac - no problem. Just don't put too much.

What I call Korean potato salad is simply roasted potatoes and mayo. It's a popular dish here. My guess is that the Korean potato salad on the mainland is Japanese potato salad made by a Korean person. Japanese potato salad is a famous dish of mine:

Sweetened condensed milk looks and tastes disgusting. I never use it in anything.
I guess authentic Key Lime Pie calls for it, but I have never made that.
I certainly would never add it to a macaroni salad.

It has it's uses. One is Magic Cookie Bars. You start with a Graham
wafer crust and top with coconut, chocolate chips, nuts and drizzled
with SCM.

It is also handy for making your own Irish Cream. Put a can of that, a
pint of cream, a few eggs, a spoonful of chocolate syrup and half a
bottle of Irish whisky into a blender. Give it a good whiz and sit back
and enjoy.

Yep, that's it. It's often among the banchan at the Korean restaurants
we go to.

You'd need that much vinegar with a can of sweetened condensed milk
and 1/2 cup sugar.

Graham, nope, don't like anything like dulce, don't make the cookie bars...there are so many that
are so much better, for me, anyway. I don't think I have had a can of SCM in the house in over
50 years, and haven't missed it at all. I really don't like the naked taste of whole milk, 2%, any
milk or cream other than skim milk and whipped cream. ;-))

pus? There's always a cow with udder infection (mastitis) in the

Sweetened condensed milk is incredibly sweet and great in desserts but I just
can't wrap my taste buds around it being mixed into macaroni salad. Like
someone else said, I'd like to try it but I'm not going to be making it.

Gary, not a fan of McD's. However, Hardee's beer-battered Cod sandwich, sold only during Lent,
is so good, it should be offered all year. (And I am addicted to their biscuits.)

I think my milk tastes were formed during WWII, when we lived on a farm, and the home
pasteurizers suffered a lack of quality metal parts because all the good stuff went to the war
effort (we were told), and consequently, the milk had a very odd and unattractive taste. I would
not drink any until the end of the meal, when I would hold my nose so I couldn't taste it, and
drink it all at once. ;-))

Not making it here either. Vinegar has it's place but if this one uses
that much to balance the sweet milk, then the recipe needs to change so
you do not need that much.

This might be a malicious, fake, recipe. If I wanted to make a sweet and sour macaroni salad, I'd just use Miracle Whip. That's not going to happen because I don't want to make a sweet and sour macaroni salad and I don't like Miracle Whip.

Sample bias. Nobody who dislikes sweet stuff (or sweet and sour) would
attempt the recipe.
