Making a kimchi meatloaf for tonight. I've made this a couple of times and I really like the flavors. I use the recipe in the link as a base and go from there. I like to use my food processor to chop the onion, garlic, kimchi mushrooms small and caramelize them in a skillet before adding to the meat mix. I also use 2 lbs of ground beef and 1 lb of ground pork. I also put in a small amount of celery and carrot.
I make way more glaze than the recipe calls for and serve it on the side as well. I'll serve this with roasted brussels sprouts and my cauliflower mash. https://www.closetcooking.com/korean-kimchi-meatloaf/ |
