We make a trip to Wegman's every couple of months. The nearest store is
30+ miles so we don't go as often as I'd like. Among other things, they had some really good looking sea scallops so I bought some. For dinner, I wanted to make the scallops with an orange butter sauce. To make it, I use a few tablespoons of frozen OJ concentrate so I wanted to pick up a can. Turns out, Wegmans does not carry frozen OJ. While I commend their good taste, using the concentrate for the sauce is much easier than reducing the regular stuff. In a large pan put in at least 3 to 4TBS of butter. Heat and add the scallops. Sear on one side and turn them over. Add a clove of garlic, chopped. When seared on the other side and cooked through, remove the scallops to the plates Mix in about 3 TBS of the frozen OJ, add a glug of either white wine or orange liquor. Stir and reduce a bit to the consistency you want. Pour over the scallops. We had a salad and warm sourdough bread to dip in the sauce. I made a sangria from sauvagnon blanc and added lemon, orange, strawberries, blueberries. I made it hours ahead. Dessert was the fruit from the pitcher of sangria. Damn, it was good. |
