I'm still waiting for the day I find a fantastic "deal" on corned beef
brisket. LOL Right now the lowest price is $3.99/lb (normally
$6.99/lb.) I doubt it will be any less expensive as Saint Patrick's Day
approaches but I'll keep an eye on the supermarket fliers. Regardless,
I'll buy a couple of them. Yes, corned beef brisket can be frozen
(Sheldon claims not, guess he's never done it) and I love corned beef so
why only have it once a year? I'll take advantage of the sales I can find.

I'm actually thinking ahead to Easter. It's not a relgious thing, it's
a Spring thing. Right now I'm leaning towards grilled rack of lamb
with asparagus. Barring that, lamb chops. It depends on what is available.

Bought a flat cut this morning for $1.78 Point cut was $1.58 Cabbage
is 15 cents a pound

My supermarket is discounting frozen turkey. Pretty soon they won't
be stocking them until November. I bought one and stuck it in my
freezer. I'll probably be painting the next couple of weekends, but
after than I think I'll roast the turkey.

I made corned beef and cabbage yesterday, it was 3.99 a pound here too,
there were a couple brands that were a bit cheaper, but looked like mostly
fat. I made red potatoes and carrots with it too. There is quite a bit left
over so we will have that again today, sandwiches for lunch, and the rest
for dinner. I like no cook days and good leftovers.

No, I bought it corned, and I cooked in the oven, no hash, just sliced.
Today will be sandwiches for lunch with sliced corned beef and then leftover
corned beef, cabbage, carrots, and potatoes for dinner.

No, I bought it corned, and I cooked in the oven, no hash, just sliced.

Corned beef - $2.99, cabbage $.68/3 yesterday at Winco. I doubt
prices will go lower except after St. Patrick's Day the price of
cabbage comes down to get rid of extra cabbage. Otherwise $.68/# is
usual price for cabbage here.

Picked up a couple this week, at $1.67 a pound.
Expect it to be less this week, and I'll likely
pick up at least a couple more (I LOVE corned beef).

And it freezes JUST FINE, and tastes JUST as good
once it's cooked. Prefer traditional cooking as well
though crockpot can be OK too.

I will wait until Saturday to cook it. Several days of tasty leftovers
won't be a hardship. I generally don't like to eat the same thing a
few days in a row. I make an exception when it comes to corned beef
brisket.

$3.99 was the loss leader for the corned beef brisket.

I did buy some lamb shanks. I'll be braising them. The chops looked
fine but I suddenly got a craving for braised shanks.

For both of you and especially Carol who lives nearby and shops
at the same stores as me....Farm Fresh has some sale prices but
only for 3 days. Thur-Fri-Sat:
- cabbage (29cents/lb)
- white potatoes (5lb bag/1.99)
- corned beef (1.99/lb)

I don't care about the beef myself. Anything made with corned
beef tastes better to me using plain nice baked ham. Just me,
not judging anyone else here.

I *will* buy some cabbage and potatoes tomorrow though...decent
price.

It has nothing to do with St. Patrick's Day, that's just when I can find
the best price. I bought two of them. I'll likely have the other in
the Fall. Each was a little over 3 lbs. (lots of shrinkage!) and cost
roughly $13 each.

I bought a small cabbage @2.49/lb (cost me $2.00, and I'll be cutting
away much of the weight when I trim the core). I bought a 5 lb. bag of
petite red potatoes for $3.99.

I probably won't even cook the potatoes when I make the corned beef &
cabbage. I do love them just boiled and tossed with butter, dried
parsley or dill weed and S&P. But small red potatoes are great for a
lot of things.

I particularly like the Pioneer Woman's recipe for "Crash Baked
Potatoes". I'm going to sound like notbob when I type boil 'em until
just tender, drain 'em, put 'em on a baking sheet. Slightly smash them
with a potato ricer/masher thingey or a large fork to break the skin.
Drizzle with olive oil, sprinkle with S&P, herbs of your choice and
roast them. Deliciously crispy outside, moist and tender inside.
They're addictive.
