Default Dinner Tonight May Be... 6/30/2017

Depending on the weather I've got a mind to cook on the grill.

Yes, it's hot outside here in South Carolina. (94F and very humid). But
I can escape to the coolness of the air conditioned house/kitchen as
needed. Here's what came to mind:

Grilled catfish fillet and split grilled yellow squash. I have a grill
basket so the fish won't fall apart. It goes on the grill last at any
rate. Doesn't take long to cook it until just flaky and tender.

Split summer (crookneck) squash, brushed with a light vegetable oil.
Corn oil is fine. Seasoned with salt & pepper and grilled slightly
offset but until browned and nicely tender inside.

The fish will be brushed with the same neutral oil and lightly seasoned
with Zatarrain's fish fry coating. I love the taste of it.

Of course if it pours down rain I can always make the same meal in the
kitchen. Stove-top in a pan for the catfish and oven roasted split
squash on a baking sheet. It's nice to have an alternative method when
weather might interfere.

Tonight it's likely to be breakfast for dinner, since I just picked
up some fresh eggs.

Last night I bought a chicken. Sometime over my four-day (yay!) weekend,
I think I'll spatchcock it, flavor it somehow and grill it.

I'm not really big into BBQ sauced chicken. Or BBQ sauced ribs, for
that matter.
