Tonight's dinner. A friend who lives in Alaska gifted me some Elk sausage.. I had a couple of big portobello mushrooms so I did a stuffing with some of the sausage. I used Emeril's recipe as a starting point and did my own thing. I added some mozzarella and sun dried tomatoes along with Italian herbs. Very tasty. Served it with some fresh green beans....been having a lot of green beans they are very good right now.....and some slaw which is not in the picture.
