lean chicken
 
Occasionally, I see one of those health food "My daily
menu" articles. It will say "Lunch: lean chicken"

Can anyone clue me to what this means? My guess is,
skin removed. Other possibilities? Are there chickens
bred especially to be low fat?

Does this apply likewise to any fowl?

I take it to mean white meat. as opposed to the legs.

Breast meat.

Turkey, yes. Duck, goose, etc., not so much.

Yep, skinless is the key. Turkey the same.

Breast meat is leaner than the dark meat. Skin should be removed
because chickens store fat under the skin,
