4# Dark chocolate
1-3/4 coups cream
15 DROPS of this:

if you didn't throw away the last batch, you could have diluted it with
about 150 pounds of chocolate and came out ok.

I am not necessarily planning on making Mint Truffles, necessarily ever again!! This may be a failed experiment! We will see.

OR...one could freeze the failed experiment and chip off a little at a time for mixing with a new batch!

I did freeze it, but only to facilitate throwing in in the garbage. And because I had the pan all ready and lined with plastic wrap, which is how I process my ganaches for dipping. I have my new Mint Truffles ganache sitting on my new candy making table right now! Been through the freezer, has warmed back up to room temp and is ready for dipping! Only 15 drops of oil of Peppermint in 4lbs of dark chocolate and almost 2 cups cream for the chocolate ganache. Should be much better!!

And I think I NAILED IT!! Could have used a full two cups of 40% cream, but my housemate Jocelyne asked for a second after I had her do quality control for me!! :-) Best compliment I could get!! (I have not tasted them yet myself!)

I generally do not eat candy while I'm making it. I tasted some of the ganache, the predominant flavor is the chocolate and mint flavor is very mild, begging a second piece!! I could have used 20 drops! I'm gonna write this down so I never make THAT mistake again!!

I figured it was what it was, and I was NOT gonna play around with the recipe anymore, just enrobe it and call it "gud enuf"! I wrote in my notes that 20 drops of oil of mint would probably be better for Chocolate Mint Truffles for 4lbs of chocolate. For future reference.

No kidding. John wasn't thinking straight. Adding mint drops to melted
chocolate, any normal person would taste as he added long before
making the candy. That was a big mistake...wth?

I had already decided to add 1.5 tsp of oil of mint to the 4lbs of chocolate. Big mistake! I will most likely never make THAT mistake again!!
