I'm here for the info, expertise, and utilitarian caveats. The guy has
this. I'm parades around the house in a garter-belt on the weekends,
and draws frightening dystopian pictures in his own blood during the
week; I don't really care about all that.

I really do care about the whole prepping and cooking and eating thing,
and it's great when you can wring a nickel's worth out of it in tat rfc!

Agreed! I also am not interested in fights, bitching, general nastiness,
politics (I subscribe to a group specifically for that) or any of the other
myriad of stuff argued about here. All I come here for is cooking and
food. If I am attacked I will retaliate but that is not why I am here.

Buckle up and get over it! After you conquer your fear, you'll be
making the best damned pie crust and pizza dough you've ever made in
your life! Start your intensive therapy by chopping a boatload of
vegetables for mirepoix in it and freeze it for late in sizes
appropriate for your usage (I use snack baggies).

I've posted my recipe for pie crust before, but I won't make you
search for it. Watch the video, then follow this recipe and you can't
go wrong. By the time your dough has finished resting, moisture has
redistributed and the dough will not appear dry. If it feels cold and
hard, let it warm up a bit (time depends on room temperature) to
facilitate rolling. You can always make your pie dough the day before
- no harm, no foul. Just remember to let it warm up to a flexible
stage. Pie dough wants to be cool, not hot, not cold - cool.

Food Processor Buttery Flaky Pie Crust (aka: Pte brisée)
Giada's original recipe with my variations

Ingredients:

1 1/4 cups all-purpose flour (or 1 ½ cups flour)
1/4 teaspoon salt

(½ t sugar, or more for pte sucrée)

1/2 cup butter, chilled and diced

1/4 cup ice water (this is always the perfect amount for me, YMMV)

*can add 1/4c grated parmesan cheese to the flour and salt, increase
water to 1/3c (I do this for chicken pot pie)

Directions

1. Measure the flour into the processor with the regular blade
attached. Add the unsalted butter, cut into cubes, and shortening,
cut into cubes. (Your fat should be frozen or very cold. You may
vary the proportions, or use some lard, but the total should be 9
tablespoons.) Add salt. Pulse three times with three counts per
pulse to mix the ingredients lightly.

2. With the motor running, pour ice water into the work bowl just
until the dough just starts to get noticeably crumbly. Don't wait
until it is a big clump or it will be way too wet and will turn out
tough.

3. Stop the machine, dump the crumbly dough into a bowl or on the
counter, and gather the dough into a ball with your hand. You can
squeeze it a bit to make it stick together. If it just won't form a
ball, add a tiny bit more water. (Note that when you are making crust
in the food processor, you will use less water than most recipes call
for.)

Wrap your dough ball in waxed paper or plastic wrap and chill it about
30 minutes in the refrigerator. Roll it out on a cool surface if you
can. Then follow your pie recipe for baking.

Note: 1 1/4 cups flour perfectly works for me.

Eating left-overs this weekend: Pasta with pollack roe, and chicken
porkolt (with a heaping helping of that Spanish paprika we got). The
wife is likely making her third tomato soup, this time and Indian
incarnation. The garden is abundunt right now with tomatoes. But I'm
going to be digging through some cookbooks and planning some serious
challenges (for me) for the upcoming week.

Well that's all duly stashed for the day I might try it. I sometimes
thing a food processor is a mechanism for lazy food-choppers. But then
you spend the time you would have spent chopping cleaning the machine!

I've got a very small one (Ninja) that I've had for over 2 years. I've
only used it once, the first day, to make sure it worked.

So far, I just use a knife for whatever I would use that for.

knife and proceed. The fat doesn't even need to be cut very small.

My only use for an FP is to cut butter and flour together finely - like
breadcrumbs. I beat tablespoons of it into liquid to make sauces. It keeps
in
the freezer very well. It saves having to make a roux the conventional way
and is very easy to use.

I like the pictures too, Steve. Even if I don't like a lot of food on
my plate your pics usually look fine. Might not be something I'd eat,
but I'm not here to criticize (or demand) pictures of food.
