The asparagus has been coming in like gangbusters....the spring
equivalent of zucchini. We have been giving a lot of it away just to
keep up.

Our favorite prep method is roasting with a bit of olive oil, salt and
pepper. Nothing else is needed.

Last night we made some ribs in the oven. When the ribs came out and
were resting, I tossed a bunch of asparagus in the drippings in the
bottom of the rib pan and roasted them there. Wow.

Sounds awesome.

So far, we've eaten it plain steamed, in an crab-and-asparagus quiche,
sliced raw with sweet onions and a vinaigrette as a salad, and chopped
with a little red bell pepper in scrambled eggs. Tonight or
tomorrow will be cream of asparagus soup. Mixed grilled veggies
is on the list.

(And the afore-photo'd asparagus and hard-boiled eggs in crepes,
with Hollandaise sauce, right out of my 1976 Crepe Cookery cookbook
and photographed with light like they must have used in the cookbook
photo back in the day.)

I can always tell when early spring has arrived, and the first clue is
a shocker because each year I forget, my pee stinks! LOL

I'm *assuming* it was popular back in the day. Crepes were sort of
an "elegant" "French" food to Midwesterners (USA) then.

I think they were popular on both coasts too. My souffle and crepe
making days coincided days too. One of my husband's colleagues told
me with a big chuckle that he was the only person she'd ever heard say
"We're having souffle/crepes *again* for dinner tonight.

Thanks. All I know is they look delicious and I'm *really* in the mood
for them right now for breakfast :) I better start practicing my

It is slang that is discarded after a year of use. Good food is good

I posted this a few years ago:

"I used to make savory creamed chicken with mushrooms crepes. I haven't
thought about that in years. Might have to dig out my recipe! Crepes
are dead easy. I also used to make cheese-stuffed manicotti, not with
cooked tube pasta shells but with filled crepes. I learned that trick
from Jeff Smith's (The Frugal Gourmet) first book."

Same concept, crepes and The Frug's version of manicotti.

Oh, and a further comment:

"Stack them separated by waxed paper or parchment paper, then wrap
them tightly and freeze them. They are easy to separate. If you only
want to thaw a few crepes at a time, there they are." :)

As for asparagus crepes, I do believe gloria p mentioned them:

"Asparagus crepes (with or without ham) topped with Hollandaise!"

That looks wonderful. I wish we were still in a climate where we could
grow asparagus. It's snowing hard, has been for 15 minutes. Freeze is
predicted for tonight and tomorrow. It'll be in the 80s by month's end.

For starters, he should upgrade his computer and his crappy internet
connection + he should add an ad blocker; but it's too easy to sit
there, play the victim and blame others for his own shortcomings.

That said, his reaction was typical of his MO:

1. Demands to see pictures and claims the poster is making it all up
if there are none.

2. Expects food magazine quality photos and nitpicks everything when
pictures and/or ingredients don't live up to his fictional standards.

Thanks for the tips. I need to set aside a morning so I can try my
hand at some crepes.

I remember that post and tried them. I personally didn't like manicotti
that way. YMMV. :) I just really like pasta if I'm going to make
something like that.
