Do you want to replace light or dark corn syrup? Golden syrup will
probably work best for light. Golden syrup with just a little dab of
treacle for dark.

Sugar and water. If you need an invert sugar, honey. A lot depends on what you're making. You can substitute sugar for corn syrup in a pecan pie but it probably wouldn't be a good idea to use honey - that would be too sweet.

It's a bit more liquid than honey. Sugar-wise it may be a bit less
sweet. I use it with any mixture that requires other liquids,
principally crčpe batter. I used it for a while in coffee and it
was actually less cloying than honey. It has no flowery accent.

the most well-known brand of corn syrup in the US is Karo and it no
longer contains HFC. It does not cost more because of this. I would
guess that other brands no longer have HFC. Ophelia is located
outside of north America.

If I was making bread I would use honey, corn syrup or molasses
interchangeably. I don't know what you are making and honey may make
a difference. Remember that honey draws moisture and helps keep your
bread from drying out.

MrD shared a recipe which included Corn Syrup, which I haven't seen here (or
noticed). I now have knowledge of other, similar things as well I
doubt very much I will change the way I use my honey now, but it is very
interesting to see the alternatives. I will buy the agave nectar
though to taste it It sounds good Do you use it and if so, what do you
use it for?

Google and Wikipedia are your friend. High Glucose Corn Syrup is corn
syrup that has undergone enzymatic processes to convert some of the
sucrose to fructose to make it sweeter tasting.

I have a bottle of blue agave nectar. I've read so much about how bad
agave is for you that I was surprised by how *not* sweet it tasted. I
haven't found much use for it though, simple syrup works for me in
agave situations.

I have a more modern recipe for shoyu pork that would be easier and fit
today's taste better. It's dead simple but I want to find it to make
sure. It's a killer recipe - will post it later.

Yes, but refer to that link I sent you where they talk about
equivalences. I have not used it in baking myself but I see no
reason why not. It will behave very much like honey.

What have you heard about it that is so bad? It is not high
fructose(?) corn syrup. It has been around since I was a child and
that has been a long time. Obviously it is very sweet but you aren't
planning to eat it by the cupful are you? It is a pretty necessary
ingredient in things like pecan pie.

If we had an idea what you need it for we might be of more help. Some
of the other sweeteners have fairly strong flavors that you may or may
not want in what you are making.
