Sunday morning... the cheesecake with chocolate chip cookie crust -
This one turned out amazingly well. I used a large pyrex pie dish. The high one with the fluted top edge, not the newer small ones with the smooth top edges. I used about 10 or so of the homemade CC cookies, crumbled them and added in about 2-3 tbs of melted butter. I pressed this into the dish to make a nice crust. Then poured in lots of cream cheese filling. I used 32 oz cream cheese, 4 eggs, tsp vanilla extract, cup of sugar. I think that's about it. Anyway, this is the best cheesecake that I've ever made or bought. The cc crust is definitely complimentary to the plain vanilla filling. YMMV! :-D |
