Chicken Tortilla Soup

Cold, windy and all around yucky weather; perfect weather for chicken
tortilla soup.

I used the Pioneer Woman's recipe, it's so good.

I love chicken tortilla soup, but mine isn't that fancy. :)

Fancy? what in your estimation, is so fancy about this recipe?

Looks good! We had Becca's tortilla soup for supper last night. I like
her version better than what we get in the local restaurants.

Yesterday for lunch, I had Menudo at a local restaurant.

2 Soups in one day!

My soup ingredients are very similar but the soup doesn't turn out
yellow. I don't use any chili powder, just Hatch and jalapeno peppers
and a can of diced tomatoes.
I think she has a very kitchen sink approach to cooking -- if 5
ingredients are good then 10 must be better.
My husband always tries to watch her show. He likes to see what is
happening with the ranch and what equipment they are using.

So many ingredients.

I think the yellow part is torn cornbread.

my monitor must display colors in a different way. The broth part is
almost French's mustard yellow. I see green cilantro leaves and golden
tortilla strips, but the broth is yellow. Pioneer Woman's broth is
the color you would associate with chili.

When you said yellow, I thought you were talking about the other one,
where I saw definite yellow. I'd say it's your monitor then. Koko's
broth is an orangey red on my monitor.

Agree. It looks thicker and darker.

The Pioneer Woman blends her tomatoes and chicken broth, if I remember
correctly. I like roasted tomatoes, corn, black beans and chicken, and I
leave my tomatoes in small cubes, I do not blend mine.
