Chili and cornbread
 

Chili with skillet cornbread. I didn't have enough yellow cornmeal, so
I added some blue cornmeal and made a great pan of cornbread. Great
meal tonight.

It's cornmeal made from a different color corn. Probably tastes
substantially identical to the yellow cornmeal we are accustomed to.

delicious. That weird corn bread does not look at all appetizing...
and that chili looks like Campbells bean soup with a left over big mac

That's because every pic koko posts looks delicious and she does a really

Ophelia, I first became aware of blue corn when I lived in New Mexico.
Here's a little information on it for you. I buy Bob's Red Mill Brand

Blue Cornmeal is made from ground Whole Blue Corn. Blue Corn (also

It represents the Eastern rising sun, the beginning of life, wisdom
and understanding. Taos Pueblo elders use Blue Corn in the naming

The chili looks very tasty to me. She must have taken it outside for
the picture though as a leaf fell on top. ;)

That cornbread though....OMG. That is the most unappetizing thing I've
ever seen. It looks like something you would use several of to make a
walkway from your driveway to the front door. It's cold too - that
slice of butter sitting on top and not melting at all. Cornbread
should be eaten right out of the oven and butter melted in
immediately.

No offense either, Koko. You post some of the most amazing good meals.
You've even beat out Steve's good food pictures. I'm sure your
cornbread was great but it just looks awful in that pic.

She said she used blue cornmeal because she didn't have any yellow.
She also said that blue corn has a more intense corn flavor than
yellow. Taste trumps looks for me. However, as you pointed out -
there's a reason so little blue food is served in restaurants.
