Sandwiches first, then, Chicken tortilla soup, chicken pot pie,
chicken enchiladas suiza. It is a toss up for dinner today.
Enchiladas or pot pie. Chickens are getting so darn big it is easy
to have leftovers.

Tetrazzini is one of the ways I use up leftover Thanksgiving turkey (I
use a short tubular pasta vs a long one to twirl. Can't say I've ever
made ala king on purpose... too many bad memories of canned products I
didn't like back when I was a kid, but I do make creamed chicken from
time to time and it's practically the same thing.

Sandwiches, pot pie, creamed over biscuits, rice, or toast, burritos,
enchiladas, casseroles, quesadillas, salad, shred and warm in barbecue
sauce - eat on buns or top baked potatoes. I should make tetrazzini more
often.

Besides all the over suggestions for chicken leftovers -
I make chicken stir fry with red or green peppers or
Chicken Provencale stir fry with zucchini, cherry tomatoes, olives
(adding cubed chicken after vegetables have cooked)
Chicken Divan, Chicken Crepes, Chicken Chow Mein, Cassoulet,
Cacciatore, Papikask, Jambalaya, and any number of casseroles.

I love leftovers or planned overs.

I love tetrazzini. I've never made it with chicken, it is usually a
leftover meal with turkey for after Thanksgiving.

You don't because it's a carb loaded calorie bomb. Kind of like
macaroni & cheese only it sounds healthier because of the chicken.

That's a great summer dish, if you have enough chicken.

I've been making it with pecans, apples, shallots and celery.
