technical question: drumsticks

I went to the local militant co-op (PCC) where they were peddling organic
drumsticks $7 for 8 so I bit. Mock me all you want, I don't care. Can
anyone diagnose the problem with poor breading adherence? I soaked them
in egg+milk, then covered in panko, and fried as shown.

Did you let them set for a while, covered, in the refrigerator? I
always do this with chicken (or fish) before pan-frying or even baking.
The coating needs time to adhere.

That's a "well, DUH" kind of comment. I hate those stupid competition
shows.

But Grandma always floured them, dipped them in beaten egg (no milk) and
then into the breadcrumbs. I don't remember any particular resting time,
other than that of necessity when she made chicken for a crowd.

Was it? I haven't fried anything in years. I wouldn't know. And the OP
did ask why his coating didn't stick.

I believe panko is like breadcrumbs, yes? When I coat meat I first coat in
flour, then egg, then the crumbs.

You could try it and see if it works for you.

Dry dredging them in seasoned flour first, then the egg and milk, and
then the crumbs. Let them sit for a while so the egg dries a bit and
sticks better.

Yes, first dust with flour, that becomes the glue.
Then dip in an egg wash (half egg half milk).
Last dredge in breading. Best to let sit in fridge for at least an
hour so the glue can set.

You can also put the Panko in the food processor to make the crumbs smaller.
