I am already thinking that a hard roll spread with butter, some slices
of that beef, thin slices of onion, salt and pepper and a little
horseradish would make a fine midnight snack :)

Slice the leftovers thin, marinate in the right herbed and spiced beef stock,
get some good Italian bread (of the kind suitable for sub sandwiches)
and you're looking at a dozen Italian beef sandwiches.

Medium-well done, and unevenly roasted. I wouldn't serve it to guests,

No one complained and the cats loved it... will be serving it again
tonight, and should be enough for tomorrow's dinner too. As I said
previously, the trick for a moist juicy roast is to pop it in the oven
half frozen.

I had no time for PCing today, had the tree removers here... they took
out a huge multi-trunked maple tree that became unsafe and two dead
trees that were too big for me to tackle alone.
