That's what creme fraiche is best for. It doesn't break.

How can sour cream be fat free?

Almond milk tastes good, and is good for you. Soy milk tastes crappy and is
bad for you. Folks who use canned milk for anything but an emergency have
very bad taste.

According to wikipedia: "Fat-free "sour cream" contains no cream at
all, and is made primarily from non-fat milk, modified cornstarch,
thickeners and flavoring agents.

It tastes like sour cream, so I'm happy.

I hope Julie is talking about something other than sweetened condensed
milk. Evaporated milk, maybe. Maybe even Carnation instant non-fat dry
milk. Sweetened condensed milk? I hope not.

Well that might be the answer - he's making the soy milk himself and
it's fresh. My guess is that the custard is some sort of soft tofu. It's
tofu like you've never tasted. It has a slight viscous and sticky mouth
feel. It's so opaque and white it looks like titanium dioxide. It's the
best cream dessert and it has no dairy at all. Amazing!

I've tried low-fat sour cream and it was acceptable. Then once, I
tried the fat-free sour cream and it was nasty. sf has serious TIAD if
she thinks that tastes like sour cream.

I rarely use sour cream but when I do, I buy the full fat version now.

<shrug> I don't eat it by the spoonful and have no dog in this fight.
The sour cream in my refrigerator at the moment is full fat - I use
low fat and no fat interchangeably with full fat and see no difference
in the way they cook or taste. I can't help it if you and squirty
can't cook, but you go right ahead and eat whatever you want - which
includes the same thing 5 days out of 7 if that's what makes you feel
superior.

Yeah. Squirty can't cook because he thinks fat-free sour cream sucks.

That would be Sheldon eating 5 out of 7 same-dishes. I certainly
don't think Gary nor I have demonstrated repetitive eating in the
least.

I think you're confused.

No, that "arrow" was shot right at me. She thinks I eat like that
because I sometimes cook large batches of soup or something on
weekends. I've gone 2-3 days eating repeats if something is very good
(like Thanksgiving dinner). Normally though, I cook large and freeze
the leftovers for an easy meal on days that I don't have the time or
urge to spend much time cooking.

Anyway, I was teasing her about TIAD for liking fat-free sour cream,
so her shot back at me was fair enough.
