Default Chayote recipe?

Anyone have a good Mex rendition?

Actually, I like 'em jes fine cooked till tender w/ a bit o' butter, but
I'm also making some more carnitas and thought I'd throw in some
veggies other than pico di gallo.

I've only done them like apples. Peel, dice, and boil in some water with
cinnamon and sweetener. Just like apple pie filling.

How about a good Cajun rendition. Here's my stuffed merliton(chayote) recipe.
It's killer.
