Default "Bien cuit" ("cook it until it's done")

As I sit here, in a cafe, eating my half-cooked fat-free blueberry muffin, I
really start to miss old school French cooking. I miss the cooking of Julia
Child and Jacques Peppin. The French understand what it means to bake a
