Freezing leftover wine?
 
Candace Anderson in her book Everything Freezer Meals says that you can
freeze wine in ice cube trays and use as needed in recipes. I'm wondering
if that's an excellent idea or no better than apple juice. Any one tried
it? Polly

Nah. I just have a bottle of fairly decent white wine on my shelf for
cooking, or sometimes imbibing. It lasts about a month.

I'd never find the darn wine icecubes anyway.

Nope, it won't freeze if the percentage of alcohol is high. You might
get some partially frozen slush...

I did and they didn't freeze properly. It's that alcohol. I'm not
surprised they didn't freeze as expected because I've read so many
cautions about the amount of real booze to use when making ice cream,
so I'll have to exercise some caution when I make rum raisin,
Bourbon-Vanilla or Roasted Banana Whiskey ice cream or else it won't
set properly. I'm thinking I'll want to use some of the real thing,
but I should probably invest in some flavoring too.

They sell those 187 ml (6+ oz) bottles of wine by the 4-pack for
people who just need a little for cooking. I keep the little bottles
of red on hand with along with some 2 buck chuck red for cooking
purposes.

Ah. Didn't know that. I did know to avoid the grocery store cooking wine.

Store it in the fridge overnight and finish it with your next evening meal.
If you occasionally need wine for a recipe, buy those little bottles that
have about 125ml in them. Those little bottles of Californian wine are
ideal, indeed, it's all they're good for!

I'm having trouble wrapping my head around the concept of "leftover
wine", but freezing it for cooking should work OK. But not in ice cube
trays (it won't freeze hard enough.) Freezing in little 2 or 3 ounce
cups or in sandwich bags should work.

I froze some milk in ice cube trays and they were almost impossible to
get out. Yeah, I know that's different.

In my view, it doesn't freeze very well. It does get hard, but sort
of like a popsicle that is thinking about melting. I tried a couple
of times and now I just don't bother. Maybe if you had little
individual containers to freeze the wine, but ice cubes are too messy.

Well - unless it's a Trader Joe's in Massachusetts. They can sell real
wine.
