Default Jerusalem Artichoke Flour?

Has anyone here used this? We screwed up today and bought some whole wheat
pasta that has it in there. I knew such a pasta existed but I allowed
daughter to choose the pasta and I didn't realize until I went to put it
away that it was in there. QFC sent us a bunch of store coupons and we were
using those. We could have bought any "natural" products adding to $5.00
and that's what she chose.

I am a tad afraid of it remembering the disgustingly horrible gas that I got
from eating the real things. Ate them raw. I ate quite a few. They were
tasty. Daughter and husband only tried a bite and they didn't suffer like I
did. Or well, they did suffer because of me.

At least it didn't cost me a lot of money, but I don't want that gassy
experience again. Someone told me they aren't as bad when cooked. What do
you think?
