Thanksgiving leftovers ideas
 
Turkey noodle soup
Turkey-vegetable soup (cream-of, with the leftover veggies)
Turkey hash (include some stuffing!)
Turkey croquets (with the leftover mashed potatoes)
Turkey enchiladas (tonight!)
Turkey tetrazzini
Turkey a la king in/on puff pastry shells

and of course, turkey sandwiches with prepared (fresh-from-the-garden)
horseradish and fresh whole-berry cranberry sauce!

What to do, what to do?? I need more turkey!

Thanksgiving leftovers ideas
 
I can't remember what order the layers are in but its a casserole you
bake that contains every part of the traditional turkey dinner-mashed
potatoes green bean casserole cranberry sauce stuffing turkey and gravy.

Put it all in a blender and have a turkey day smoothie.

Thanksgiving leftovers ideas
 
Turkey Devonshire sandwiches:

1 slice toast, crusts trimmed off
3 slices crisp bacon
5 thin slices cooked turkey breast
1/2 cup butter, melted
1 cup flour
1/4 lb grated cheddar cheese
1 pint chicken broth
1 pint hot milk
1 teaspoon salt
parmesan cheese
paprika

Directions:

Preheat oven to 450 degrees. Fry bacon and remove from pan.Drain.
Set aside.Melt ¾ stick butter in deep pan and add flour, stirring
constantly. Add chicken broth. Stir. Add hot milk. Stir. Add
cheese and salt.Bring to boil. Reduce heat. Cook slowly for 20
minutes, stirring constantly. Cool to lukewarm. Whip cheese sauce
with wire beater until smooth. Place 1 slice toast in a casserole
dish and top with 3 slices bacon. Add 5 slices turkey. Cover with
the whipped cheese sauce. Sprinkle with a little melted butter,
Parmesan cheese, and paprika. Bake 10-15 minutes until golden brown.

I'm mixing chunks of turkey with the leftover Waldorf Salad (not much
here to work with since we didn't host Thanksgiving this year). Love
your croquets idea.

Sounds yummy (my son does something like that, only its a sandwich...
which I don't like). Please post when you find out! I'll file it
away for next Thanksgiving.

I usually run out of turkey before ideas- but I was looking at their
methods on the stock and had one of those 'How come I didn't think of
that?' moments.

I *don't* roast the carcass at 450F and don't think I will.

but this one got me;
"Note: if you have a "real" roasting pan . . . make your stock in
that, and take advantage of all the leftover fond (browned bits of
meat) from the roasting. Not only will that make for a richer stock,
it'll help clean the roasting pan!"

I rinse the pan with boiling water, scraping up all the good bits-
then put it in the stock pot. I can't believe I've never saved the
effort of washing that extra pan. And when it comes time to
reduce it- the roasting pan should work faster than the stock pot.

So that tip was worth the price of admission--

But turkey-fried rice is one that hadn't occurred to me. . . . and
turkey matzo ball soup. . .

wiki-I thought the dumplings i.e. small rolled balls of stuffing
dropped into a hot turkey soup and served sounds delicious and fun. It
wouldnt be right with meat stuffings but simple bread stuffings it
would.
