I blanch broccoli for about 2 minutes in boiling salted water and
then flash chill it in a bowl of cold water with ice.

It leaves it bright green and very crisp-tender. I do a bunch that
way and keep it in the fridge for a few days
and take whatever I need for a meal out and put it in a hot pan with
some butter and seasoning and toss it
to get it hot. Doesn't need any more cooking, just heating up and
seasoning.

Here's my methodology for blanching green vegetables. Works like a
charm.

Thanks. I try to steam for about 3:45 but I forgot the timer with the
broccoli-- had to through it out. Had the texture of lunch school steam
table vegetables... blanching. hmmm.

Steaming in microwave works well for me. I use the old corning ware glass
top of various sizes.

To me, microwaving of most vegetables doesn't taste the same, or have the
same texture. I used to, but no more.

That seems like a long time. Must be on low heat? I usually do it on high
heat for 3 minutes and let sit a couple minutes... Now I feel like making
some broccoli. If I do, I'll set the timer so I don't overcook or fall
asleep.
