I see napa cabbage all year, most oriental veggies are available all
year as nowadays they are usually grown hydroponically. Not knowing
your recipe it's difficult to offer a substitute, but usually bok choy
works.

Depending on your texture and flavor requirements anywhere from Savoy
cabbage through any type of cabbage to even other types of leaf veggies.
