The basic universal mint chutney is mint, onion, and hot chile pepper,
mixed to almost a puree. Anything after that is a variation and
subject to one's personal taste preferences. I can see any of the
other ingredients listed as a bonus flavor note. Ginger, cilantro,
parsely, coconut, etc, all sound pretty dang good, to me.

I suspect those who have an aversion to ginger are a separate
group. My mother could not tolerate fresh ginger, claimed it
tasted of soap, but she could eat cilantro. I have found there is
a leaf in mesclun mixes that tastes bad (like rotten vegetation) to
me.
