Malanga root- recipes?
I was looking for Jicama in a few stores the other day and kept seeing
Malanga- so I finally bought a couple pounds. [took me 4 stores to find a Jicama-- and that one only had a few days left on its life. I don't use it often, but I've never had trouble finding it before] Then when I went looking for Malanga recipes I didn't find a whole lot of them. I tasted it raw & it seems like a not-so-starchy potato with some real nice nutty background. Fried up nicely so I think I try some fritters that are reminiscent of latkes. I'm looking at a simple cream of Malanga soup. [Malanga, roasted garlic & stock] Anything I *have* to try while I'm playing with Malanga? Jim |
