Default WHITE CHOCOLATE!!!

I got my recent Chocoley.com order moments ago via Fedex and I'm
trying something new this year. I've never worked with white chocolate
before but ordered 2# of V125 Indulgence Couverature WHITE Chocolate,
and I'm gonna try making egg nog truffles out of it! And cover them in
white chocolate compound coating!! With RUM in them too!! Just for
flavor. ;-)

MmmmmmMMMMMMMM!

I love inventing new candies! :-)

Central West End, Lee. The Skinker/Debaliviere neighborhood, walking
distance to the Delmar Loop! Probably the coolest part of STL! :-)
Public transportation central too. Which for STL is not saying much,
but...

I know the debate if whether or not white chocolate is even chocolate,
since it contains only cocoa butter but no cocoa or chocolate liquor.
But it's pretty darned good! I sampled some. It's gonna make great egg
nog truffles. Cocoa is too strongly flavored for egg nog truffles. I
know, I made a batch of ganache with 65% dark chocolate and the egg
nog flavor was obliterated by the cocoa flavor.

No egg nog truffles for YOU, Bull! ;-)

i love the loop, one of my favorite places to take friends from out of
town... I'll be over to be a taste taster for you, egg nog is one of my
favorite addictions, lots of recipes made to drink over the years, some
candies, but most tend toward the harsh, seems like either too much nutmeg
flavor or fake rum in the things i have tried, Lee

I was Googling recipes for egg nog truffles, and one I saw had pics of
the finished candy and they sprinkled nutmeg on the pieces after they
were dipped in white chocolate! Very cool! I'm gonna do that, because
that will give the eater the nutmeg experience first, then the white
chocolate/egg nog/rum flavors!!

And they look very pretty too:

I think the official amount of "a light sprinkle per piece" should
suffice.

And of course there will have to be quality control samplingS of the
new product. ;-)
