Force feeding ducks and geese
I was watching the food network yesterday. They showed a farm in
Quebec where they raise and also force feed ducks. It's kind of neat, and a little gross. They make a mixture of corn meal and water, then hook this feed up to a type of gun. I think this gun has a trigger mechanism, and a long tube. The fowl gets this gun pushed down it's throat and the trigger is squeezed releasing the feed. I thought this practice was outlawed in Canada. I guess not. |

They must be making fois gras. I haven't heard that word since the last trip to France. Did they give a product name where one can find it? It does great things to your cholesterol levels. Kent |

It's not my duty to read all rhetoric on this NG as you seem to. There's nothing on this NG about foie gras other than as part of a comment. I don't think it's ever been discussed. We're all much too low life for that, including me. I'm not a "great chef". I'm a struggling amateur as all of us on this NG are. Finally, I think references to one's ethnicity on this NG is very inappropriate. We're all amateur chefs, sharing what we know about cooking, without regard to age, gender, education, credentials, travel history, or ethnicity. That's what makes this exciting, at least for me. Tournedos Rossini* was removed from the menus from several very upscale Chicago restaurants, including, I think The Bakery. Is that restaurant still in existence? Kent *filet mignon of beef, pan-fried in butter, served on a crouton, and topped with a slice of whole foie gras. |

They kicked the out British in 1948, and established Boer apartheid rule. Independence would have been far more humane if Africa had gained independence under British rule, as in India. The British left something workable behind when they left their colonies. The Danes, French, and Germans left nothing. |

Mostly Dutch and German, but a few Danes (lumped in with other Scandinavians) snuck in. The Germans contributed the Mauser rifle, which allowed the Boers to kick Khaki bum. http://en.wikipedia.org/wiki/Boer#Origin nb |

The Boers in South Africa were Danish. ?????? The Boers were primarily Dutch. Make that overwhelmingly Dutch. > They kicked the out British in 1948, and established Boer apartheid rule. ??? South Africa was already independent. In 1948 the National Party had a majority and started passing segregation laws. It was still part of the British Commonwealth until 1961. > Independence would have been far more humane if Africa had gained > independence under British rule, as in India. Among the most successful countries in the world are those which are members of the Commonwealth or former British colonies. |

At the time Danemark included much of what is now Norway as well. But Beowulf was a Geat note a Dane. Where's Geatland? Same general area. Giving us Beowulf compensates for a lot of the Vikings. A couple of shiploads. Okay, drop in the bucket. Luktefisk. Maybe more Norwegian but a long time ago most or Norway was a part of Danemark. So there you go. A bad rap for food. |

FWIW.... the Danish flag first appeared in Tallinn Estonia, apparently a gift from God in their battle to conquer Estonia. The Danes controlled part of the UK for a while the 9th century. |

BOOOOOEERING!! Let's talk foie gras. I know some on here think it inhumane to hunt, but the liver from a wild deer is excellent, as is its heart. Lamb has about the best liver I've ever had. I'm sure domesticated foie gras whoops the crap out of wild goose liver, which is good, but not terrible. They must feed it a lot of simple sugars and that becasue when i see it on TV, it's about 4 times the size of a wild goose's liver. |
