Default A&W hamburger seasoning

A&W uses a seasoning when making mama and papa burgers. It is a redish
(cayenne) colored mixture and quite salty. Would anyone know the
composition of this seasoning mixture?

Based on your description, it sounds an awful lot like Lawry's Seasoned
Salt. (Have you asked them what they're using?)

Well, Duh!... if "quite salty" is the *only* taste you perceive then obviously
it's mostly salt! The red colorant can be lots of things, but probably plain
old cheapo paprika... were it enough cayenne to turn salt appreciably red then
it would be way too hot for the vast majority. In fact if it contained even a
very small quantity of cayenne (salt accentuates flavors) then you'd have
certainly perceived some heat and mentioned that too rather than just the red
color. But I seriously doubt that any chain fast food joint is just willy
nilly seasoning with cayenne, especially considering how a major portion of the
fast food customer base is young children, and children's taste perceptions are
a hundred fold more acute than their parent's, which is why very few youngsters
will tolerate strongly spiced foods. And that's why your average chili head is
a middle aged male, their taste perceptions are about on par with their sperm
count... they need hot pepper to taste food and viagra with porno flicks to get
hard. Um, not me. LOL

this. The wife just brought home some Fried Chicken from their deli...
it's got MSG, therefore I can't eat it with my corn allergy.

Stupidmarket delis are no different from stand alone neighborhood delis,
they're not held to adhere to any corporate mandated recipes... in
stupidmarkets they pretty much pull off the shelf whatever seasonings are sold
in the store and they're indescriminately applied depending on the mood of
whoever's turn it is that day... typically one of the popular seasoning blends.
I doubt they even read the list of ingredients on the label. The thing is, if
you, or anyone, have serious food alergies you probably shouldn't be eating any
prepared foods other than that which you prepared yourself... what makes you
think your favorite restaurant doesn't use msg. That said, most foods contain
msg naturally, even breast milk. I seriously doubt you are allergic to msg...
less than 1% of the world population is and only very slightly. Chinese
restaurant syndrome is not about any allergy, it's from ingesting too much msg,
Chinese cooks are heavy handed with seasoning and so they way over do the msg,
and the salt. Folks experience exactly the same symptoms from ingesting too
much table salt, or from nitrites in coldcuts... wanna experience Chinese
restaurant syndrome, eat a whole pound of bacon. The thing is, unlike salt, it
is not possible to know if there is too much msg merely by tasting. Food
requires very little msg to receive the full effect... adding more does nothing
to further enhance flavor, only overloads the eater. Use msg very sparingly, a
1/4 teaspoon, a small knife tip worth is plenty enough for a big potful of
soup/stew, and when you use msg cut way back on the salt. Of course you'll
need to have a flavorful dish to begin with, plenty of fresh ingredients, and
herbs... all the msg and salt in the world won't enhance the flavor of
pishwasser, and why would anyone want it to.

A friend of mine cooked at A&W when we were in high school (1980's), and
IIRC, she told me once that it was either Johnny's or Lawry's:

Its definitely not cayenne its seasoning salt you can find two that are very close one is lawry's and Im not sure the other I would know it to see it I cant remember the name though.A mixture of the two came extremely close.

What does MSG have to do with "corn allergy"?

Plus, you can use even less MSG if you also add a tiny bit of I&G.

The bad thing about supermarket fried foods is not MSG or I&G, but the fact
that they fry in shitty, unhealthful oils that are high in Omega 6.

Sodium-wise, MSG is less than 13% sodium, and salt is over 50% sodium.
Disodium inosinate and disodium guanylate are also less than 13% sodium,
and you use both I&G and MSG in *far* lighter concentrations than one
typically uses salt.

If you think that either of those flavor enhancers aggravates your "corn
allergy" you are incorrect.
