Any hints for sweet potato fries? Mine come out either too limp or
too browned/burned.

I do mine as oven fried, using the recipe in JOC for regular tater oven
fries. You are welcome to use more grease if you want them greasier.
The crux of the JOC instructions is soak the cut fries in ice water,
then dry very carefully before tossing in oil and baking.
