chicken, sweet potato and coconut milk curry recipe
I finally took the plunge and bought curry paste. The outcome was
delicious, easy and fast - a good candidate for 30 Minute Meals! To begin with, I cut the recipe in half and there's enough leftover for another serving. I used thigh meat instead of breast and I'm glad I did because I think white meat would have been too dry. I had a long, skinny sweet potato, so I cut it into "generous" half inch coins and cut them in half again so the pieces looked like half moons (they took only 10 minutes to cook). I think the curry flavor could have been stronger, so I'm doubling it next time. I added 1 medium-sized onion cut in eights (cut in half and quarter each half). I didn't have red lentils, but I had orange - so I used them instead. I don't know what the purpose of adding lentils was supposed to be. To thicken the sauce? IMO, the finished sauce was too thin. Although the recipe didn't say to do it, I covered the dish while it simmered. Maybe the sauce would have been thicker if I'd left the cover off but I wanted the potatoes to cook. I need to work on that part, so curry cooking tips are welcome. Here is the recipe that inspired dinner tonight (the conversions are my own notes). It was served on a bed of white rice. Chicken, Sweet Potato and Coconut Curry http://www.bbcgoodfood.com/recipes/1...-coconut-curry Serves 2-4 Ingredients 1 tbs sunflower oil (I used canola) 2 tsp mild curry paste 2 large boneless, skinless chicken breasts cut into bite-size pieces (I used thigh) 2 medium-sized sweet potatoes, peeled and cut into bite-size pieces 4 tbs red split lentils 300ml chicken stock (1.5 cups) 400ml can coconut milk (14 oz can) 175g frozen peas (3/4 cup) Directions Heat the oil in a deep frying pan or wok, stir in the curry paste and fry for 1 minute. Add the chicken, sweet potatoes and lentils and stir to coat in the paste, and then pour in the stock and coconut milk. Bring to the boil, and then simmer for 15 minutes. There is definitely something wrong with the visual aspects portion of your brain, along with your other areas of brain damage. A normal brained person would have plated that food over a bed of rice using a slotted spoon, including only a small quantity of that pukey sauce. Do us all a big favor, shitcan your camera. |

It's apparent that he's never seen curry before. It was still in the pan when I took the picture. I served it on a bed of rice, it was *very* tasty and the sauce I put on the rice was an amount between the two mentioned above. Oh, boo hoo hoo...
